If you are unfamiliar with tofu, or simply need inspiration for good ways to cook it, I have recipe for an easy tofu breakfast. This dish uses tofu as a substitute for eggs in an omelet, and it resembles scrambled eggs.
Tofu is a very good absorber of flavors. It tastes good with almost anything, but I particularly recommend this combination of veggies for the color, and also the satisfying taste experience.
I recommend rice, because it is a good cultural match to the tofu; however, hash browns or just toast would round out the flavors equally well. Those who see these items as essential to a tofu breakfast would do well to include them.
Use firm tofu to avoid unnecessary wetness. Silken, or soft, tofu, is the alternative. It easy to smash with a fork (like eggs), but lighter in nutritional value and harder to cook.
This recipe should take about half an hour of total cook and prep time.
Ingredients
- 14 oz. firm tofu
- One red pepper
- 5-8 oz washed spinach
- 1 Tbsp cooking oil
- Pinch of salt

Cut tofu, red pepper and spinach into 1/8 inch dice. Mix separately in a large bowl with a pinch of salt. Heat frying pan with cooking oil.
Stir-fry the tofu mixture until the leaves are wilted and the water cooks out, which should take about 10 minutes.
Serve with lots of rice and toast, plus hot sauce to taste.
